Let's unbind some builtin keys that I don't use. I'm not sure if I'll replace them with anything or not, but at a minimum it'll avoid accidental keypresses and clean up which-key output.

The doom modeline looks nice. I'm turning off IRC notifications, because it was slow to update (and
